Outback Steakhouse has launched Best Steaks Ever, an update to its steak menu that includes new cuts and changes to how steaks are trimmed, seasoned, and cooked. What Changed With Outback’s Best Steaks Ever Program

Outback revised its cut specifications, hand-trimming techniques, seasoning standards and cooking methods as part of the update. According to Outback Steakhouse President Pat Hafner, the company reviewed each step of the process, from the cuts it buys to how each steak is seasoned and cooked.

The Five Steaks on Outback’s New Lineup

The Best Steaks Ever menu includes five cuts, two of them new to Outback:

  • Down Under Delmonico Ribeye: A new thick-cut, heavily marbled ribeye.
  • New York Strip: New to Outback, a cut that balances flavor and tenderness.
  • Victoria’s Barrel-Cut Filet Mignon®: A hand-trimmed, shaped filet with a seared crust.
  • Center-Cut Sirloin: A leaner cut with Outback’s seasoning and sear.
  • Rockhampton Ribeye: A marbled ribeye.

Outback Names Chef Efrem Cutler Chief Steak Officer

Outback has named Chef Efrem Cutler its Chief Steak Officer. Cutler has more than 45 years of culinary experience and will represent the brand on steak selection, marbling, seasoning and preparation. Cutler says a steak’s quality depends on the cut, marbling, trimming, seasoning and cooking method.

How Ribeye, Filet Mignon, Strip and Sirloin Differ

Recent Outback research found that 41 percent of Americans feel confident they know the differences between steak cuts. Ribeye is known for flavor, while filet mignon is known for tenderness. The New York strip offers a mix of both, and sirloin is a leaner cut.

Spokesbooth Records Diners’ First-Bite Reactions

At select locations, Outback has set up Spokesbooth, a camera setup built around one of its restaurant booths. Guests can try a Best Steaks Ever cut and record their reaction on camera. Some videos may appear on Outback’s social media channels and in future advertising.
